The Clermont-l'Hérault olive oil cooperative was founded in 1920 to triturate olives from Clermont-l'Hérault and surrounding villages.
Despite the rotation picking system used by olive growers, the tonnage handled has continued to increase, rising from 173 tons in 1920/1921 to 1,333 tons in 1954/1955. The freeze of February 1956 silenced the six mills operating in the Hérault and the impact was so great that local cooperatives decided to halt their activities and hand trituration of their members' olives over to the Clermont cooperative

Since then, the Clermont cooperative's administrative board has included representatives from throughout the Hérault and the cooperative is now the cooperative for the region, the Huilerie Cooperative départementale.
The Clermont-l'Hérault huilerie remains the only olive oil cooperative in the Hérault. It has more than 3,800 members, including 677 from Pignan. Most are farmers whose olive growing activity supplements their annual income.
